Citron Salmon Tostadas

Ingredients:

  • 1 Rebel Fish Citron salmon portion
  • 2 teaspoons olive oil
  • 2 6-inch toasted flour or corn tortillas
  • 1/4 ripe avocado, sliced
  • ¼ cup shredded red cabbage
  • 1 tablespoon crumbled cotija cheese
  • 1 tablespoon crema
  • 1 tablespoon salsa fresca
  • Thinly sliced jalapeno, for serving
  • Cilantro, for serving
  • Lime wedges, for serving

Yields: 1 serving
Prep Time: 15 minutes
Cook Time: 10 minutes

Preparation:

  • Cut Rebel Fish salmon portion into ½-inch pieces. Combine salmon and Citron Flavorpack in a small bowl, tossing to coat.
  • Heat oil over medium heat in a non-stick pan. Add salmon and cook until center is opaque, tossing occasionally, about 6 to 8 minutes.
  • Top tortillas with black beans, avocado, cabbage, cotija cheese, crema, salsa and salmon. Serve with jalapeno, cilantro and lime wedges.
