Thai Gochujang Glazed Salmon with Butternut Squash

Ingredients:

  • 1 cup diced butternut squash
  • 4 cloves garlic
  • ½-inch piece ginger, grated
  • 1 tablespoon olive oil
  • 1 Rebel Fish Thai salmon portion
  • 1 tablespoon prepared gochujang sauce
  • Black sesame seeds, for garnish
  • Chopped cilantro, for garnish
  • Salt and black pepper, to taste

Yields: 1 serving
Prep Time: 15 minutes
Cook Time: 35 minutes

Preparation:

  • Preheat oven to 400 degrees F. Line baking sheet with foil. Toss squash, garlic and ginger with olive oil. Season with salt and pepper, to taste.  Bake 10 minutes and push squash towards side of baking sheet.
  • Place Rebel Fish salmon portion on sheet pan and season with Thai Flavorpack. Bake 6 minutes and brush salmon with gochujang sauce.  Continue baking until salmon is cooked through, about 6-8 minutes
  • Transfer squash to a serving plate. Top with salmon and garnish with sesame seeds and cilantro.
