Combine Rebel Fish Zest Flavorpack, breadcrumbs and 1 tablespoon olive oil in a small bowl. Place salmon on baking sheet lined with foil and brushed with oil. Cover salmon with seasoned breadcrumbs. Oven bake Rebel Fish salmon portion according to package directions.
Bring ½ cup of water in medium sauté pan to boil. Add peas and cook until just tender, about 3 minutes, drain and set aside.
Using the same pan, heat remaining tablespoon of olive oil over medium heat. Sauté shallot until translucent, about 3 minutes. Reduce heat to low, add zest, peas and orzo, tossing until warmed through. Season with salt and pepper, to taste.
Transfer orzo to a serving plate. Top with salmon portion, sprinkle with chopped mint
