Zest Panko Crusted Salmon with Mint, Peas & Orzo

Ingredients:

  • 1 Rebel Fish Zest salmon portion
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons extra virgin olive oil, plus more for pan
  • ½ cup green peas, fresh or frozen
  • 1 small shallot, sliced
  • Zest of one lemon
  • 1/2 cup orzo, cooked according to package directions
  • 2 mint sprigs, leaves picked and julienned
  • Salt and pepper, to taste

Yields: 1 serving
Prep Time: 30 minutes
Cook Time: 20 minutes

Preparation:

  • Combine Rebel Fish Zest Flavorpack, breadcrumbs and 1 tablespoon olive oil in a small bowl. Place salmon on baking sheet lined with foil and brushed with oil.   Cover salmon with seasoned breadcrumbs.  Oven bake Rebel Fish salmon portion according to package directions.
  • Bring ½ cup of water in medium sauté pan to boil. Add peas and cook until just tender, about 3 minutes, drain and set aside.
  • Using the same pan, heat remaining tablespoon of olive oil over medium heat. Sauté shallot until translucent, about 3 minutes.  Reduce heat to low, add zest, peas and orzo, tossing until warmed through.  Season with salt and pepper, to taste.
  • Transfer orzo to a serving plate. Top with salmon portion, sprinkle with chopped mint
